I ended up with some extra cash a few months ago, so I sprung for a 360.
I'm too cheap to buy a lot of games (I always wait till they go way down in price) And I had my regular X Box games, But I wanted to get one new game.
I heard a lot of people say that Gears of War was the best X Box 360 game. Personally I'm not super impressed. I don't love the game play, I hate the grenade handling, and the whole game is grey. (I am constantly shooting my own people--they look the same as the bad guys)
The graphics are phenomenal, and it is a decent game... but I would have rather waited and paid $30 instead of the initial $70.
It obviously depends on what genres you like. Bioshock is a great FPS with role-playing elements (the demo on Xbox live gives a good indication of gameplay). I've been playing through Mass Effect over the last few weeks and that is very good fun if you like a good story / sci-fi RPG. If you are into driving games then there is always Forza 2 and Colin McRae DIRT. Call of Duty 4's single player is short but extremely entertaining and memorable. If you have 60+ hours to burn and you like RPGs then I agree that Oblivion is a must.

Oblivion, halo 3 for multiplayer, call of duty 4 for awesome singleplayer (yes short) or multiplayer, A.Creed but it gets very repetitive but looks gorgeous (stab, pickpocket, jump, fight assainate rinse and repeat)
Play the demos, and hire a few games to find the ones you might like.
My favorite is Oblivion, I haven't played my Mass effect yet (waiting on New HDTV first)
I have a few need for speeds as well (carbon & wanted), but that is the type of car racing that I like.
Guitar Hero III is good.
Halo 3 apparently is also good.
and my wife wants "Scene It" for some Trivia action
(she wanted Monkey Island, but I had to tell her that it is not on Xbox)
