If you are having just one extender connected over wireless then yes it will work fine, although only if using 802.11a as the connection method.
There aren't many 802.11a access points around, but since the latest dashboard update Microsoft seem to have fixed the Apple Airport Extreme N connection issues (when the Airport is set to n/a mode) - set the Airport up in bridge mode and it works just as an Access Point - you can also get them at reasonable prices - most other vendors seem to see 802.11a as a business standard, so charge more for it.
The other option is to go Ethernet over Power, although if you go this route it can be pricey because you really need the "HD" version that supports 200Mbps for streaming HD content. Netgear make these, and I've seen them at Hardly Normal but you can probably get them online. They work by plugging one in near your router/switch and connecting the ethernet cable, then the other near the client network device (Xbox 360 in this case), and connect it's ethernet cable. The boxes will then mux the ethernet into the power lines inside your house.
Caveats: (1) The longer the distance of cable the slower the speed, and (2) they need to be on the same power circuit/phase or they won't find each other.
Last option is of course ethernet - which to be honest is probably your cheapest option with best results, but also hardest to do.
